Beef & Cauliflower Stir-Fry

Ingredients

  • ½ cup Green Bell Pepper
  • ½ cup Yellow Onion
  • 1 tablespoon Garlic
  • 4 cup Cauliflower
  • 1 cup Crushed Tomatoes
  • 1 lb Ground Beef

Seasoning

  • 2 teaspoon Taco Seasoning
  • ¼ teaspoon Salt
  • ¼ teaspoon Black Pepper

Instructions

  • In a medium bowl, combine crushed tomatoes with 1 teaspoon taco seasoning and mix thoroughly
  • In a large skillet over medium-high heat, combine Beef, Onion, Salt/Pepper and 1 teaspoon taco seasoning. Using a Ground Meat Chopper or Spatula crumble beef into small chunks. After beef starts to brown add Onion, Bell Pepper and Garlic. Continue cooking until veggies have slightly softened.
  • Add Cauliflower, cover and cook briefly (3 mins). Remove lid and stir-fry until meat is cooked throughout and cauliflower is about the consistency of cooked rice (approximately 3 mins). Reduce heat and add seasoned tomatoes. You're finished cooking when all ingredients are hot.
