- 4 cup Cauliflower
- 1 cup Crushed Tomatoes
- 1 lb Ground Beef
- 2 tsp Taco Seasoning

- 1/4 tsp Black Pepper
- In a medium bowl, combine crushed tomatoes with 1 tsp taco seasoning and mix thoroughly
- In a large skillet over medium-high heat, combine Beef, Onion, Salt/Pepper and 1 tsp taco seasoning. Using a Ground Meat Chopper or Spatula crumble beef into small chunks. After beef starts to brown add Onion, Bell Pepper and Garlic. Continue cooking until veggies have slightly softened.
- Add Cauliflower, cover and cook briefly (3 mins). Remove lid and stir-fry until meat is cooked throughout and cauliflower is about the consistency of cooked rice (approximately 3 mins). Reduce heat and add seasoned tomatoes. You're finished cooking when all ingredients are hot.
