- ½ cup Green Bell Pepper
- ½ cup Yellow Onion
- 1 tablespoon Garlic
- 4 cup Cauliflower
- 1 cup Crushed Tomatoes
- 1 lb Ground Beef
Seasoning
- 2 teaspoon Taco Seasoning
- ¼ teaspoon Salt
- ¼ teaspoon Black Pepper

In a medium bowl, combine crushed tomatoes with 1 teaspoon taco seasoning and mix thoroughly
In a large skillet over medium-high heat, combine Beef, Onion, Salt/Pepper and 1 teaspoon taco seasoning. Using a Ground Meat Chopper or Spatula crumble beef into small chunks. After beef starts to brown add Onion, Bell Pepper and Garlic. Continue cooking until veggies have slightly softened.
Add Cauliflower, cover and cook briefly (3 mins). Remove lid and stir-fry until meat is cooked throughout and cauliflower is about the consistency of cooked rice (approximately 3 mins). Reduce heat and add seasoned tomatoes. You're finished cooking when all ingredients are hot.
